For my first recipe I decided to try to make mushroom risotto because it is one of my favorite dishes but I have never tried making it. One of my goals for this project was to find recipes that I could quickly and easily make on a weeknight...its safe to say I did not meet this goal. This dish took me a little over an hour of constant attention. This is not a recipe to make on a busy evening (like the week before the TPA is due). When I read that I have to continuously stir the rice and broth for 20 minutes straight (more like 30) I started to have regrets about already excitedly buying all the ingredients. However as I stood in front of the stove stirring in a half cup of broth at a time into the rice mixture I started to feel relaxed, there was actually something therapeutic about it. Cut to 20 minutes and 5 cups of broth later and I'm about to abandon my post to look up the symptoms of Carpal Tunnel on WebMD. However, I somehow found the strength to stir on! The dramatic made for TV movie depicting this heroic struggle will air in Summer 2016. Finally it was time to poor in the cooked mushrooms (obviously the best part) and yep, you guessed it, more stirring! Then the moment I had been waiting for arrived; I took at bite and it was delicious! The only change I would make would be to cook the mushrooms just a few minutes longer.

- If you are short on time, ripping mushrooms is just as effective as chopping.
- If towards the end of cooking the rice it seems as if it is taking longer for the broth to absorb, just push the pan back onto the burner and things should progress much quicker.
All in all I now know that I can make one of my favorite dishes at home and I may have lost some sensation in my right hand :)
