I know that I set out to find easy dinner recipes, but I think that this truly awesome past salad could be used as a side dish or a main dish on a night that I'm craving something lighter. This would also be a great dish to bring the math department pot lucks! This dish is really easy to prepare except for the chopping, chopping , and more chopping. I definitely realized that I do need to invest in that slap chop! However it is still doable to make this on a weeknight, just not a very busy one. One mistake I made was that I started off by only putting in half the bottle of dressing because I did not want the salad to be too greasy. However after the salad sat for a bit the pasta fully absorbed the dressing and it was too dry. That was an easy fix and I just added in the rest of the bottle. I also learned that with respects to timing, it is important to begin cooking the noodles before chopping the other ingredients so the noodles have time to cool. I think that this recipe is great because I can substitute or add different ingredients for the ones listed. For example in stead of provolone cheese I could try New Zelander cheese sprinkled on the top!
